These delectable recipes counter the fishy, vinagered taste of sushi in two different ways, both with chicken and apricots.

Sushi, by definition, is nothing more than vinegared rice. Anything can be put in sushi, from last night's leftovers, to these two delicious treats, both using chicken breast and fresh apricots.

Not only are these flavor combinations delicious, sushi is in fact incredibly cheap to make at home, and filling. These bring food costs way down, and can be eaten cold, so make an ideal boxed lunch. Additionally, they are incredibly healthy, using more natural ingredients. The fact that sushi is incredibly filling doesn't hurt either, causing most people to eat much less, for those on a diet.

Chicken Teriyaki and Apricot Sushi

Teriyaki sauce simmers strips of chicken breast, with fresh apricots to provide a bit of crisp, and a sweet tart countperpoint. These perfectly compliment the slightly tart vinegared rice, and distinctive taste and smell of sushi nori.

Recipe

  • 1 raw chicken breast
  • 1 Tsp oil
  • 1/2 cup teriyaki sauce
  • 1 fresh apricot
  • 1 1/2 cups prepared sushi rice
  • 2 sheets sushi nori

  1. Heat oil to around medium heat in a small skillet or pan.
  2. Trim the fat from the chicken breast and cut it into strips, and add to heated pan of oil.
  3. Brown for 1 minute on each side, then add teriyaki sauce. Let simmer 3-5 minutes, or until chicken is fully cooked.
  4. Spread sushi rice onto nori sheets and cut apricot into quarter inch slices.
  5. Place chicken strips and fresh apricot slices on the rice and roll the sushi as normal, then slice and serve.
Chicken and Apricot Salsa Sushi

Chicken breast strips slowly simmered in spicy salsa, with fresh apricot for a lightly crisp sweetness inside a sushi roll. The slightly tart taste of vinegared rice enhance the flavor of the salsa, and the unique sushi nori taste and texture let the apricot shine through.

Recipe

  • 1 raw chicken breast
  • 1 Tsp oil
  • 1/2 cup medium or hot salsa
  • 1 fresh apricot
  • 1 1/2 cups prepared sushi rice
  • 2 sheets sushi nori

  1. Heat oil to around medium heat in a small pot.
  2. Trim the fat from the chicken breast and cut it into strips, and add to heated pot of oil.
  3. Brown the chicken in the oil for about 2 minutes stirring occaisionally.
  4. Drain excess oil from chicken, reduce to medium-low heat, and add salsa. Then cover and simmer 5-7 minutes, stirring to avoid burning the salsa.
  5. Spread sushi rice onto nori sheets and cut apricot into quarter inch slices.
  6. Place chicken strips, with some salsa from the pot, and fresh apricot slices on the rice. Roll the sushi as normal, then slice and serve.
